Ingredients:
  • olive oil cooking spray
  • 350g extra-lean beef mince
  • 2 x 125g cans red kidney beans, rinsed, drained
  • 35g packet taco seasoning mixture
  • 2 x 24cm pizza bases
  • 40g 50% reduced-fat cheddar cheese, thinly sliced
  • mixed salad greens, to serve
  • 1/2 large avocado, chopped
  • 62.50 ml low-fat cottage cheese
  • 1 green onion, finely chopped
  • 1 garlic clove, crushed
  • 62.50 ml coriander leaves
Instructions:
  • Preheat oven to 180°C. Heat a large frying pan over medium-high heat and lightly spray with oil. Add the mince and cook while stirring with a wooden spoon to break it up until browned, about 3 to 4 minutes.
  • Add the beans and seasoning to the dish and cook while stirring for a couple of minutes until everything is heated through. Remove from the heat.
  • Lay out the pizza bases on oven trays. Spread the beef mixture evenly. Sprinkle with cheese. Bake for 15 minutes or until the bases are crisp and the cheese is melted. Transfer to a chopping board.
  • Prepare the guacamole by mixing avocado, cottage cheese, lemon juice, onion, and garlic in a bowl. Use a fork to mash the ingredients together until well combined. Finally, season with salt and pepper to taste.
  • Top pizzas with creamy guacamole, then sprinkle fresh coriander on top. Slice into wedges and serve alongside a vibrant salad greens mix.
