Delicious guacamole pairs perfectly with crunchy corn chips.
Ingredients:
  • 1 tsp ground coriander
  • 2 ripe avocados, halved, stone removed, peeled
  • 1/2 red onion, finely chopped
  • 1 red birdseye chilli, seeds removed, finely chopped
  • 62.50 ml finely chopped fresh coriander
  • 42.00 gm lime juice
  • Corn chips, to serve
Instructions:
  • In a heated frying pan over medium heat, toast the cumin and ground coriander until fragrant, about 1 minute. Transfer the toasted spices to a bowl. Mash the avocado until smooth in the same bowl. Add the onion, chili, fresh coriander, and lime juice, then stir thoroughly. Season with salt and pepper and serve alongside corn chips.
