Baked egg noodles with applesauce and vanilla - a comforting noodle pudding.
Ingredients:
  • 1 (16 ounce) package egg noodles
  • 0.5 cup margarine
  • 4 eggs, beaten
  • 1.5 cups applesauce
  • ground cinnamon, for dusting
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring salted water to a rolling boil. Add egg noodles and cook until al dente, about 5 minutes. Drain the noodles in a colander.
  • Combine margarine with the noodles until melted in a large bowl. Add in eggs, sugar, applesauce, and vanilla extract. Transfer the mixture to a 9x13 inch baking pan and sprinkle with cinnamon. Cover the pan with aluminum foil before baking.
  • Bake in the preheated oven for 30 minutes, then uncover the kugel and bake until golden brown, for an additional 20 to 30 minutes.
