Elevate your guacamole with bold flavor toppings like chorizo, goat cheese, and bell peppers. Get creative with colorful substitutions for a gourmet snack or appetizer.
Ingredients:
  • 1 corn cob
  • 18.40 gm vegetable oil
  • 4 shortcut bacon rashers, chopped
  • 4 large avocados
  • 60ml (1/4 cup) fresh lime juice
  • 1/2 small red onion, finely chopped
  • 40.00 ml chopped fresh coriander
  • 125g tomato medley mix, sliced
  • 60g feta, crumbled
  • 1 jalapeño, sliced
  • Avocado oil, to serve
  • Lime wedges, to serve
  • Plain corn chips, to serve
Instructions:
  • Preheat a chargrill pan over high heat. Grill the corn for 10 minutes, rotating occasionally, until tender and charred. Allow it to cool. Use a sharp knife to slice the kernels off the cob.
  • Heat oil in a frying pan over medium heat. Add bacon and cook, stirring occasionally, until crisp, about 3-4 minutes. Transfer bacon to a paper towel-lined plate to drain.
  • Combine the mashed avocado with lime juice, onion, and coriander in a bowl. Season with salt and transfer to a serving dish.
  • Arrange the corn, bacon, tomato, feta, and jalapeño on top. Then generously drizzle with avocado oil. Serve with lime wedges and corn chips on the side.
