Marinated microwaved vegetables

Ingredients:
  • 3 medium zucchini, cut lengthways into 5mm-thick slices
  • 3 baby eggplants, cut lengthways into 5mm-thick slices
  • 6 mushroom caps, halved
  • Salt & ground black pepper, to taste
  • 60mls 1/4 cup) olive oil
  • 1 ripe medium tomato, finely diced
Instructions:
  • Layer zucchini slices in a microwave-safe dish, cover, and cook on High for 2-3 minutes until tender. Let it stand for 3 minutes before serving.
  • Sauté the eggplant slices for 4-5 minutes and the mushrooms for 2-3 minutes in separate pans. Once cooked, transfer all the vegetables to a serving platter.
  • Prepare the marinade by whisking together olive oil and balsamic vinegar in a small bowl. Gently stir in the tomato. Drizzle over the vegetables, season with salt and pepper. Cover and let it marinate for 1 hour before serving.
