Crispy breadcrumb topping with salty haloumi elevates creamy fish and vegetables.
Ingredients:
  • 30g butter
  • 1 leek, pale section only, thinly sliced
  • 40.00 ml plain flour
  • 17.70 gm Dijon mustard
  • 300ml light thickened cream
  • 125ml chicken
  • 600g firm white fish fillets, cut into 3cm pieces
  • 450g frozen broccoli, carrot, cauliflower mix
  • 70g breadcrumbs
  • 100g haloumi, grated
  • 60g tasty cheese
Instructions:
  • In a large heavy-based ovenproof frying pan, melt butter over medium heat. Saute leek and garlic until softened, about 2-3 minutes. Mix in flour and cook until grainy, about 1 minute. Stir in mustard, then slowly pour in the cream and stock.
  • Bring the mixture to a boil, then lower the heat. Cook for 2 minutes. Add the fish and cook for 2-3 minutes or until it's fully cooked. Next, stir in the frozen vegetables, season, and simmer for 1-2 minutes until the vegetables are heated through.
  • Preheat the grill to medium heat. Mix the breadcrumbs, haloumi, and cheddar in a small bowl. Spread the mixture over the fish. Lightly spray with olive oil. Grill for 5-10 minutes until the top is crispy and golden.
