Enhance fall veggies with zesty lemon peel and fresh herbs for a burst of flavor.
Ingredients:
  • 3 tablespoons butter or margarine, softened
  • 3 tablespoons finely sliced fresh chives
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried thyme leaves
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon pepper
  • 3 cups fresh cauliflower florets (about 1 lb)
  • 3 cups fresh broccoli florets (7 oz)
Instructions:
  • Heat 2 quarts of water in a 4-quart saucepan over high heat until boiling. In a small bowl, combine butter, chives, thyme, lemon peel, salt, and pepper until well blended; set aside.
  • Place cauliflower into a pot of boiling water and cook for 2 minutes. Next, add broccoli and continue cooking for 2 to 3 more minutes until vegetables are crisp-tender. Drain and return the vegetables to the pot.
  • Combine the velvety butter mixture with the vibrant vegetables in the saucepan and gently toss until thoroughly coated.
