Cheesy cauliflower and broccoli casserole with a creamy sauce and crispy bread crumb topping.
Ingredients:
  • 1 pound broccoli crowns, cut into small pieces
  • 0.5 pound cauliflower, broken into small florets
  • 0.25 cup butter
  • 2 tablespoons all-purpose flour
  • 1.25 cups half-and-half
  • 0.5 teaspoon Dijon mustard
  • 0.66666668653488 cup grated Cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 0.0625 teaspoon paprika
  • salt and ground black pepper to taste
  • 3 tablespoons grated Cheddar cheese
  • 2 tablespoons bread crumbs
Instructions:
  • Preheat the oven to 375°F (190°C).
  • 1. Boil a pot of lightly salted water. Add broccoli and cauliflower and cook until tender but still slightly crisp, about 2 to 3 minutes. Drain in a colander and then shock in ice water to halt cooking. Finally, transfer to a baking dish.
  • While the broccoli and cauliflower cook, melt butter in a saucepan over medium heat. Brown and bubble the flour in the butter for 3 to 4 minutes. Stir in half-and-half and mustard and bring to a boil. Simmer on medium-low heat until the sauce thickens, about 2 minutes.
  • Mix together 2/3 cup of Cheddar cheese, Parmesan cheese, and paprika into the sauce. Cook and stir until the cheeses are melted. Season with salt and pepper.
  • Drizzle sauce over broccoli and cauliflower in the baking dish, then generously sprinkle with 3 tablespoons of Cheddar cheese and bread crumbs.
  • Bake until topping is golden brown, about 15-20 minutes in the preheated oven.
