Satisfying cheesy casserole with broccoli, chicken, and cauliflower - a quick and delicious comfort meal using frozen veggies and canned soup.
Ingredients:
  • 1 (10 ounce) can low-sodium cream of mushroom soup
  • 2 skinless, boneless chicken breasts, cubed
  • 2 (10 ounce) packages frozen cauliflower and broccoli mix
  • 2 tablespoons butter
  • 1.5 cups milk
  • 0.75 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 1.5 cups shredded Cheddar cheese, or more to taste
  • 1 pinch garlic powder, or to taste
  • 0.5 cup seasoned bread crumbs, or more to taste
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • In a saucepan over medium heat, blend 1/2 can of mushroom soup with an equal amount of water. Introduce chicken to the mixture, bring to a simmer, and cook until chicken is no longer pink in the center, approximately 3 to 5 minutes.
  • Microwave one unopened bag of cauliflower and broccoli mix for 4 to 6 minutes until hot. Allow the bag to stand for about 2 minutes, then open and transfer the vegetables to a bowl. Repeat with the second bag.
  • In a saucepan over medium heat, melt butter. Stir in milk and salt, then whisk in the cream of mushroom soup. Slowly add flour while whisking constantly to avoid lumps. Mix in Cheddar cheese and stir until a thick cheese sauce forms, about 5 to 7 minutes. Finally, add garlic powder.
  • In the baking dish, create a delicious layered masterpiece - start with half the veggies, half the chicken, and half the cheese sauce. Sprinkle a touch of bread crumbs. Keep stacking with the rest of the veggies, chicken, and cheese sauce. Finish with another sprinkle of bread crumbs. Cover with foil before baking.
  • Bake until bubbly in the preheated oven for 20-30 minutes.
