Cozy up with a delicious cauliflower and broccoli pasta bake, oozing with cheesy goodness.
Ingredients:
  • 375g Macaroni
  • 500g pkt frozen Cauliflower & Broccoli
  • 200g Don Middle Bacon Rashers, rind removed, finely chopped
  • 60g Butter
  • 50g plain flour
  • 625ml milk
  • 120g tasty cheese
Instructions:
  • Preheat oven to 200C. Boil macaroni in a large saucepan of water according to package instructions until al dente, then add cauliflower and broccoli for the final 2 minutes. Drain thoroughly.
  • Heat a large saucepan over medium-high heat. Cook bacon, stirring occasionally, until crisp, about 3 minutes. Using a slotted spoon, transfer the bacon to a plate. In the same pan, melt butter. Stir in flour and cook for 2 minutes until the mixture bubbles and becomes grainy. Reduce heat to low, then slowly pour in milk. Cook and stir constantly for 5 minutes until the sauce boils and thickens. Remove from heat and stir in the cheddar. Season to taste before serving.
  • Combine the macaroni mixture and bacon until well mixed. Transfer the mixture to a large baking dish and bake for 20 minutes, or until deliciously golden brown and heated through.
