Easy Chicken Parmesan

Classic Chicken Parmesan: Breaded chicken cutlets fried to perfection, topped with tomato sauce, gooey mozzarella, and Parmesan cheese. Pair with pasta or a crusty roll.
Ingredients:
  • For the sauce:
  • 1/2 large yellow onion, grated (don't cut onion in half, just grate half of a whole onion), about 3/4 cup of grated onion
  • 1/4 cup extra virgin olive oil
  • 2 medium garlic cloves, minced
  • 1 (28-ounce) can crushed tomatoes
  • Pinch red pepper flakes
  • Pinch sugar
  • For the chicken:
  • 4 chicken breast cutlets (1 1/4 to 1 1/2 pounds)
  • Salt
  • 2 large eggs
  • 1 cup breadcrumbs, Panko or homemade
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh basil leaves, thinly sliced
  • 8 ounces mozzarella cheese, sliced
  • To serve:
  • Cooked spaghetti, or sub rolls
Instructions:
  • Begin the sauce by heating olive oil in a saucepan over medium-high heat. Sauté onions for 2 to 3 minutes, then add minced garlic and cook for an additional minute until fragrant. Stir in crushed tomatoes, oregano, red pepper flakes, and sugar. Bring to a simmer and continue cooking uncovered while you prep the chicken, around 10 to 12 minutes.
  • Preheat your oven to a toasty 400°F.
  • Tenderize chicken cutlets: Place each cutlet between plastic wrap or wax paper. Use a meat hammer, mallet, rolling pin, or heavy wine bottle to flatten to 1/4 to 1/2-inch thickness. Season both sides with salt.
  • For dredging: Combine breadcrumbs, 1/2 cup Parmesan, and a pinch of salt in a shallow bowl big enough for the cutlets. In another shallow bowl, whisk the eggs.
  • 1. Coat cutlets with breadcrumbs and fry: Heat 1/4 cup olive oil in a large sauté pan over medium-high heat until shimmering. Dip chicken cutlets in egg and breadcrumb mixture. Cook in batches, frying until golden brown on each side, approximately 3 to 4 minutes per side.
  • Prepare the chicken for baking by generously covering the bottom of a 9x13 casserole pan with tomato sauce. Place the browned cutlets on top of the sauce, spoon more sauce over each cutlet, sprinkle with sliced basil, top with mozzarella slices, and finish off by sprinkling with the remaining 1/2 cup of Parmesan cheese.
  • Oven-Bake: Cook at 400°F until the mozzarella is golden brown, about 10-12 minutes.
  • Serve the dish with pasta and the extra sauce, or on a large roll.
