Easy weeknight chicken Parmesan, perfect for any occasion. Serve with spaghetti.
Ingredients:
  • canola oil cooking spray
  • 0.5 cup water
  • 1 egg, beaten
  • 1.5 cups bread crumbs
  • 6 tablespoons grated Parmesan cheese, divided
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
  • 6 skinless, boneless chicken breast halves
  • 2 cups spaghetti sauce
  • 1 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and generously coat a 9x13-inch baking dish with cooking spray.
  • In a bowl, whisk together water and egg until smooth. In another bowl, combine bread crumbs, 2 tablespoons Parmesan cheese, oregano, basil, thyme, and garlic powder.
  • Coat each chicken breast in the egg mixture and then in the bread crumb mixture, ensuring a perfect coating on each piece.
  • Double dip each coated chicken breast in the egg mixture and bread crumb mixture, then place in the prepared baking dish. Spray the breaded chicken breasts with cooking spray.
  • Place in the oven that's been preheated and bake for 40 minutes.
  • Cover each chicken breast generously with savory spaghetti sauce, then layer rich mozzarella cheese and the rest of the flavorful Parmesan cheese on top.
  • Bake until chicken is fully cooked and cheeses are gooey, around 15 minutes more. Use an instant-read thermometer to check for a minimum temperature of 165 degrees F (74 degrees C).
  • Drizzle this savory sauce over a bed of al dente pasta.
