Quick and delicious baked chicken marinara, ready in 35 minutes, is a tasty twist on chicken parmesan.
Ingredients:
  • Sauce:
  • 2 tablespoons extra virgin olive oil
  • 3 shallots, peeled, finely chopped
  • 4 garlic clovesfinely (about 4 teaspoons)
  • 1 28-ounce can crushed tomatoes
  • 2 teaspoons dried oregano
  • 1/4 teaspoon dried crushed red pepper flakes
  • 1/2 cup chopped fresh basil
  • Chicken:
  • 3/4 cup breadcrumbs
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 9 boneless chicken thighs (skinless or skin-on, your preference), if large pieces, then cut in half
  • 4 tablespoons extra virgin olive oil
  • 3/4 cup grated mozzarella cheese
Instructions:
  • Prepare the flavorful sauce: In a large saucepan over medium heat, warm 2 tablespoons of olive oil. Sauté the shallots until tender, around 4 minutes, then stir in the garlic and cook for another minute. Add the tomatoes, oregano, and crushed red pepper flakes, and simmer until the sauce thickens for approximately 10 minutes. Finally, mix in the fresh basil and season with salt and pepper to your liking. Set the delicious sauce aside for later use.
  • Prepare the chicken for frying: In a shallow bowl, mix the grated Parmesan with breadcrumbs. Set up another bowl with flour and a separate one with beaten eggs. Coat each chicken piece in flour, then egg, and finish by coating in the breadcrumb mixture.
  • Preheat the oven to 350°F for the perfect cooking temperature.
  • Sear the chicken in a large nonstick skillet with 4 tablespoons of olive oil over medium-high heat until golden brown and fully cooked, approximately 4 minutes per side, working in batches if needed.
  • For a mouth-watering dish, assemble the chicken in an oven-proof dish, spread sauce over the chicken, top with Mozzarella cheese, then bake at 350°F for 10 minutes. Alternatively, microwave on high for 10-20 seconds until the cheese melts perfectly.
