Savory Italian chicken thighs baked with creamy ricotta, three cheeses, and marinara sauce - a perfect, easy weeknight meal paired with pasta.
Ingredients:
  • 0.5 cup low-fat ricotta cheese
  • 0.25 cup freshly grated Parmesan cheese
  • 0.5 teaspoon Italian seasoning
  • 1 pound skinless, boneless chicken thighs
  • 1 teaspoon garlic powder
  • 1.5 cups marinara sauce
  • 0.75 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Mix together creamy ricotta cheese, flavorful Parmesan cheese, fragrant Italian seasoning, and a hint of salt in a small bowl; let the flavors meld together as you prepare the rest of the recipe.
  • Sprinkle both sides of the chicken thighs generously with garlic powder and salt.
  • In an oven-proof skillet, heat olive oil over medium-high heat. Brown chicken thighs, starting with the smooth side down, for 3 to 4 minutes. Flip them over, then add a dollop of ricotta cheese mix on each thigh. Top with marinara sauce.
  • Cook the chicken in the preheated oven until no longer pink in the center and the juices run clear, typically around 25 minutes. Ensure the thighs reach an internal temperature of at least 165 degrees F (74 degrees C) when checked with an instant-read thermometer.
  • Sprinkle mozzarella cheese on top of each thigh and bake for an additional 2 to 3 minutes until the cheese is melted. Finish by garnishing with parsley before serving.
