Healthy oven-baked chicken, coated with crunchy pretzels and Parmesan for a quick and flavorful dish with reduced calories and saturated fat.
Ingredients:
  • 4 (4-oz) skinless, boneless chicken breast halves
  • 2 egg whites
  • 2 tablespoons honey mustard
  • 1 1/2 cups mini pretzels, crushed (about 1 cup)
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1/2 teaspoon dried thyme, crushed
  • Nonstick olive oil cooking spray
Instructions:
  • Preheat your oven to 425°F. Tenderize the chicken using a meat mallet until uniformly thin, sandwiched between two layers of plastic wrap.
  • In a shallow dish, whisk egg whites and mustard together. In another shallow dish, mix crushed pretzels, cheese, and thyme.
  • Coat chicken in egg white mixture, then press into crumb mixture to fully coat. Place chicken in a single layer on an ungreased foil-lined baking sheet. Sprinkle any remaining crumbs on top and gently press down. Finish by coating with a layer of cooking spray.
  • Roast the chicken in the oven, uncovered, for 14 to 18 minutes or until it reaches an internal temperature of 170°F and is no longer pink.
