Skinny Crispy Vanilla-Caramel Popcorn

Ingredients:
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup tub-style 50% to 70% vegetable oil spread
  • 1 1/2 teaspoons vanilla
  • 12 cups popped light popcorn
Instructions:
  • Preheat your oven to 300°F. In a 4-quart Dutch oven, heat brown sugar, granulated sugar, vegetable oil spread, and salt over medium heat until boiling and sugar is dissolved. Stir in vanilla, then add popcorn and coat evenly.
  • Spread the crunchy coated popcorn in a shallow roasting pan and bake uncovered for 15 minutes, remembering to stir it once. Then, elegantly transfer the popcorn to either a large piece of foil or a spacious roasting pan to let it cool gracefully.
