Crispy chicken with only 200 calories and 87% less saturated fat. Get ready for a satisfying crunch!
Ingredients:
  • Nonstick cooking spray
  • 1 cup finely crushed multigrain tortilla chips
  • 1/2 teaspoon dried oregano leaves, crushed
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon freshly ground black pepper
  • 1 egg
  • 4 boneless skinless chicken breast halves (about 1 1/4 lb)
  • Shredded romaine (optional)
  • Thick & chunky medium salsa (optional)
  • Avocado slices (optional)
Instructions:
  • Preheat the oven to 375°F and generously coat a 15x10x1-inch baking pan with nonstick cooking spray. In a shallow dish, mix together tortilla chips, oregano, cumin, and pepper. In another shallow dish, lightly beat the egg. Dip the chicken in the egg, then coat it evenly with the tortilla chip mixture.
  • Place the chicken in the baking pan and bake for approximately 25 minutes until fully cooked and reaches 170°F. For serving, consider placing the cooked chicken on a bed of shredded romaine and top with salsa and avocado slices for a delicious presentation.
