Skinny Spicy Orange Crunchy Butterfly Shrimp

Healthier twist on shrimp: Crispy baked shrimp coated in buttermilk, soy, and pepper sauce with a crunchy Wheaties™ crust.
Ingredients:
  • 1 pound fresh or frozen jumbo shrimp
  • 1/2 cup low-fat buttermilk
  • 1 tablespoon reduced-sodium soy sauce
  • 1 to 2 teaspoons bottled Frank's™ RedHot™ Original cayenne pepper sauce
  • 11/2 cups Wheaties™ cereal, finely crushed
  • 2 tablespoons sesame seeds
  • 1 1/2 teaspoons grated orange peel
  • 1/4 teaspoon salt
Instructions:
  • If shrimp are frozen, thaw them. Peel and devein the shrimp. Butterfly the shrimp by cutting from the vein side almost through to the opposite side, then spread them open.
  • Place the shrimp in a resealable plastic bag set in a shallow dish. In a small bowl, mix buttermilk, soy sauce, and bottled hot pepper sauce. Pour the marinade over the shrimp in the bag, seal it, and refrigerate for 30 minutes to 2 hours, turning the bag occasionally.
  • 1. Preheat the oven to 425°F. In a shallow bowl, mix together cereal, sesame seeds, orange peel, and salt. Drain shrimp and discard the marinade. Coat the shrimp with the cereal mixture, pressing gently to adhere. Place the shrimp on a baking sheet lined with parchment paper or foil and press any extra coating onto the shrimp. Bake for 10-12 minutes until the shrimp are opaque.
