Skinny Spicy Apricot-Glazed Salmon

Elevate salmon with apricot nectar, soy sauce, and ginger glaze.
Ingredients:
  • 1 16-ounce fresh or frozen skinless salmon fillet, 1 inch thick
  • 1 1/2 cups apricot nectar
  • 1/3 cup snipped dried apricots
  • 2 tablespoons honey
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
Instructions:
  • If fish is frozen, thaw it. To make the glaze, combine apricot nectar, apricots, honey, soy sauce, ginger, garlic, cinnamon, and cayenne pepper in a medium saucepan. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes until the mixture thickens and reduces by half, stirring occasionally. Reserve 1/4 cup of the glaze for basting; save the rest for serving later.
  • Preheat the broiler. Rinse the fish and pat it dry. Place the fish on the greased, unheated rack of a broiler pan, ensuring any thin edges are tucked under.
  • Broil the fish 4 inches from the heat for 8-12 minutes until it flakes easily with a fork, turning once halfway through and brushing with the remaining ¼ cup glaze during the last 4 minutes. Cut the fish into four portions and serve with the extra glaze on the side.
