Skinny Spicy Tostadas

Healthy, crunchy, and full of flavor with a Mexican twist, this dish has 76% less fat and 59% less sodium than the original recipe. Your taste buds will thank you!
Ingredients:
  • 4 6-inch corn tortillas
  • 4 teaspoons olive oil
  • 1 medium onion, chopped
  • 1 cup canned black beans, rinsed and drained
  • 1 cup chopped seeded tomato
  • 1 cup shredded reduced-fat Monterey Jack, cheddar, or mozzarella cheese (4 ounces)
  • 2 tablespoons chopped fresh cilantro
  • 1 clove garlic, minced
  • 1 fresh jalapeño chile pepper, seeded and finely chopped
Instructions:
  • Preheat your oven to 425°F. Arrange tortillas on a baking sheet without greasing it. Brush both sides of the tortillas with 1 teaspoon of oil. Bake for 3 minutes, flip them over, and bake for an additional 3 minutes until they are golden brown and crisp.
  • In a large skillet over medium-high heat, sauté onions, chile pepper, and garlic in the remaining 3 teaspoons of oil until onions are tender. Add black beans and tomato, and heat through.
  • First, cover the tortillas with half of the cheese. Next, spread the bean mixture over the cheese. Then, even out the remaining cheese on top. Bake for about 4 minutes until the cheese is melted. Finish by sprinkling with fresh cilantro.
