Baked Chicken Parmesan

Quick and easy Baked Chicken Parmesan: coat chicken in Parmesan and breadcrumbs, bake, top with homemade tomato sauce. Serve with noodles.
Ingredients:
  • Sauce:
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, peeled, finely chopped (about 2 teaspoons)
  • 1 can (28 oz) crushed tomatoes (we use Muir-Glen)
  • 1/2 teaspoon dried basil (or 1 tablespoon chopped fresh basil)
  • 1/4 teaspoon dried oregano (or 1 teaspoon chopped fresh oregano)
  • 1/4 teaspoon sugar
  • Salt and ground black pepper to taste
  • Chicken:
  • 3 tablespoons Dijon mustard
  • 1 tablespoon white-wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds chicken breast cutlets (or skinless boneless chicken breasts or thighs that have been pounded to a 1/4-inch thickness)
  • 1 cup breadcrumbs (panko or homemade)
  • 1 cup Parmesan cheese, finely grated
  • 3 tablespoons unsalted butter, melted
Instructions:
  • Prepare the sauce: Heat olive oil in a large saucepan over medium high heat. Sauté garlic until fragrant, around 30 seconds. Add crushed tomatoes, basil, oregano, sugar, salt, and pepper. Bring to a simmer, cook for 10-12 minutes until slightly thickened and flavors combine. Adjust seasoning to taste, cover, and keep warm.
  • Preheat the oven to 450°F and line a baking sheet with foil, parchment, or a Silpat. Next, move on to preparing the chicken while the sauce simmers.
  • Prepare the coating: Combine mustard, vinegar, salt, and 1/4 teaspoon pepper in a large bowl. Coat both sides of the chicken cutlets evenly with the mixture.
  • Coat the chicken: Combine breadcrumbs, grated Parmesan, and 1/4 tsp black pepper in a bowl. Add melted butter and mix thoroughly. Spread the mixture onto a shallow plate. Press chicken pieces into the breadcrumb mix, ensuring full coverage. Arrange coated chicken on the baking sheet.
  • Bake the dish at 450°F on the center oven rack until it is cooked and golden brown, which typically takes about 15 minutes.
  • Serve the dish alongside rice, noodles, or pasta and generously spoon the sauce over the chicken.
