Chef John's Cheesy Chicken Parmesan Dip: A delicious twist on the classic favorite, ideal for any gathering.
Ingredients:
  • 1 cup whole-milk ricotta cheese
  • 1 pound skinless, boneless chicken breast halves
  • 1 pinch salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 4 tablespoons olive oil, divided
  • 3 tablespoons cold water
  • 8 ounces grated mozzarella cheese
  • 8 ounces grated Monterey Jack cheese
  • 1 ounce grated Parmigiano-Reggiano cheese
  • 2 cups prepared marinara sauce
  • 0.5 cup panko bread crumbs
  • 2 tablespoons olive oil
  • 2 tablespoons grated Parmigiano-Reggiano cheese, or to taste
  • 2 tablespoons grated mozzarella cheese, or to taste
  • 2 tablespoons grated Monterey Jack cheese, or to taste
  • 1 teaspoon (packed) coarsely chopped fresh Italian parsley
Instructions:
  • Place the ricotta cheese in a mesh strainer over a bowl in the fridge for 8 hours to overnight to drain.
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Season the chicken with a blend of salt, pepper, and cayenne for a flavorful kick.
  • In a pan over medium-high heat, warm 2 tablespoons of oil. Sear chicken breasts until golden and cooked until almost done, approximately 6 minutes per side. Turn off heat, add a splash of cold water to deglaze. Move chicken and drippings to a bowl and allow to cool for 5 minutes. Finally, dice or shred the chicken.
  • In a bowl, mix together drained ricotta cheese, salt, pepper, 8 ounces mozzarella cheese, 8 ounces Monterey Jack cheese, and 1 ounce Parmigiano-Reggiano cheese until evenly distributed. Stir in chicken, pan drippings, and marinara sauce until just combined.
  • Mix bread crumbs and the rest of the olive oil in the chicken bowl until coated.
  • Spread the chicken mixture evenly in a baking dish and sprinkle with a mixture of oiled breadcrumbs, 2 tablespoons each of Parmesan, mozzarella, and Monterey Jack cheese on top.
  • Bake in the preheated oven until golden and bubbling, approximately 20 minutes.
  • Allow the dish to rest for 10 minutes for the flavors to mingle. Sprinkle with chopped fresh parsley for a pop of color, and serve with a spoon or spreading knife for easy enjoyment.
