Enhance baked chicken Parmesan with zesty ranch dressing mix in the breading for a flavorful upgrade.
Ingredients:
  • 0.5 sleeve buttery round crackers, crushed
  • 1 cup dry bread crumbs
  • 0.25 cup Parmesan cheese
  • 1 (1 ounce) package ranch dressing mix
  • 2 eggs, beaten
  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons butter, cut into 4 pats, or to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously butter a 9x13-inch glass baking dish.
  • Combine crushed crackers, bread crumbs, Parmesan cheese, ranch dressing, salt, and pepper in a convenient resealable bag for easy mixing.
  • Coat a chicken breast in beaten eggs, allowing excess to drip back into the bowl. Transfer the chicken to a bag with breading and shake well to coat completely. Arrange in the baking dish. Repeat with remaining chicken breasts. Finish by placing a pat of butter on the top of each breast.
  • Roast in the oven until the chicken is beautifully golden on the outside and cooked through, about 1 hour. Use an instant-read thermometer to ensure it reaches at least 165 degrees F (74 degrees C).
