Simple and flavorful spicy chicken pozole made with tender shredded chicken, white hominy, chili powder, garlic, and aromatic herbs for a cozy and satisfying dish.
Ingredients:
  • 4 tablespoons vegetable oil, divided
  • 2.5 pounds skinless, boneless chicken breast halves
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2.5 quarts chicken broth
  • 3 cups water
  • 4 tablespoons chili powder, or to taste
  • 2 teaspoons salt, or to taste
  • 1 teaspoon crumbled dried oregano
  • 3 cups white hominy, rinsed and drained
  • 10 tostada shells
Instructions:
  • In a deep skillet over medium-high heat, heat 2 tablespoons of vegetable oil. Cook chicken breasts until no longer pink and juices run clear, around 20 minutes. Remove from skillet, drain, and cool. Once cooled, shred chicken using a fork.
  • In the same skillet, heat the remaining vegetable oil over medium-high heat. Sauté the onion and garlic until soft and transparent, about 5 minutes. Add back the shredded chicken, then mix in chicken broth, water, chili powder, salt, and oregano. Cover, reduce heat to low, and simmer for around 90 minutes.
  • Cook hominy until tender, about 15 minutes. Adjust seasonings by tasting and adding more salt and chili powder as needed. Serve in soup bowls with a tostada shell and garnish to your liking.
