Quick and easy chicken dinner ready in under 30 minutes for busy weeknights.
Ingredients:
  • 1 tablespoon olive oil
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1 teaspoon finely chopped fresh or 1/4 teaspoon dried rosemary leaves
  • 1 clove garlic, finely chopped
  • 1 lb ground chicken or turkey
  • 1/4 cup dry red wine, if desired
  • 1 box (12 oz) spaghetti
  • 1 tablespoon salt
  • 1 jar (23 oz) marinara sauce
  • Salt and pepper to taste
Instructions:
  • Fill a large 6-quart stockpot or Dutch oven with water and bring to a rolling boil over high heat.
  • In a 3-quart saucepan over medium heat, sauté oil, onion, carrot, and celery for 2 to 3 minutes until the onion softens. Introduce rosemary and garlic, cook for 30 seconds. Add chicken and cook for 5 minutes, breaking it up with a spoon until it browns.
  • Take the saucepan off the heat and gently fold in the wine. Place it back on the heat and let it simmer for 1 minute.
  • Add spaghetti and 1 tablespoon of salt to a pot of boiling water and cook according to the package instructions.
  • Combine the marinara sauce with the chicken mixture and cook over medium-low heat for 10 minutes. Taste the chicken ragu and season with salt and pepper if necessary. Serve over cooked spaghetti.
