Effortlessly create a flavorful coconut shrimp curry in one pot in just 30 minutes, using frozen shrimp. Perfect for a quick midweek meal.
Ingredients:
  • 1 Tbsp olive oil
  • 1 cup finely chopped onion
  • 1/2 teaspoon mild yellow curry powder
  • Pinch of ground cardamom or the seeds from 1 cardamom pod, crushed
  • 1/2 teaspoon Kosher salt
  • 1 cup canned coconut milk (use regular coconut milk NOT light)
  • 1/4 cup water
  • 1 pound raw, peeled, deveined shrimp (with or without tail)
  • Cilantro for garnish
Instructions:
  • In a medium sauté pan over medium heat, heat olive oil. Add chopped onion and cook until translucent, about 5 minutes. Stir in curry powder, cardamom, and salt and cook for an additional 2 minutes.
  • Pour in the coconut milk and water, then simmer for 5 to 10 minutes.
  • Combine the shrimp: Mix the shrimp into the curry sauce, ensuring an even distribution in the pan. Let it simmer for 5 minutes, stirring occasionally, until the shrimp changes color from grey to pink and is fully cooked. Be careful not to overcook, as it can make the shrimp rubbery. Garnish with cilantro and serve alongside basmati rice or coconut-infused basmati rice.
