Peppercorn chicken with mushroom gravy over rice or mashed potatoes.
Ingredients:
  • 6 boneless, skinless chicken breasts, trimmed of fat
  • 1 cup water
  • 1 packet peppercorn gravy mix
  • 1 medium onion, sliced into thin rings
  • 2 (10.5 ounce) cans condensed cream of mushroom soup
Instructions:
  • Preheat your oven to a toasty 400 degrees F (205 degrees C).
  • Combine water and gravy mix in a 2-cup liquid measuring cup, whisking until smooth.
  • In a 9x13-inch glass baking dish, layer chicken breasts followed by onion slices. Top with condensed soup and pour gravy mixture over everything. Cover with a lid or aluminum foil before baking.
  • Roast in the preheated oven for 1 hour, stirring halfway through, until chicken is fully cooked and the juices run clear. Check for doneness by using an instant-read thermometer – it should read 165 degrees F (74 degrees C) when inserted near the bone.
