Easy Crispy Vietnamese Shrimp Balls

Try these homemade crispy shrimp balls for a delicious Vietnamese-inspired appetizer at your next party.
Ingredients:
  • 2 large eggs, beaten
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 large egg, lightly beaten
  • 2 tablespoons minced shallot
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • 2 teaspoons packed light brown sugar
  • 2 teaspoons fish sauce
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste
  • 1.5 cups fine bread crumbs
  • 0.5 cup vegetable oil for frying, or as needed
Instructions:
  • Give the shrimp a refreshing cold water bath and gently dry them with a paper towel. Cut the shrimp into medium chunks and transfer them to the food processor bowl.
  • Combine a beaten egg, shallot, sesame oil, cornstarch, brown sugar, fish sauce, garlic, salt, and pepper with the shrimp in a food processor. Blend until smooth. Chill the shrimp paste in a bowl until slightly firm, around 30 minutes.
  • Take the shrimp paste out of the refrigerator and shape it into balls using an ice cream scoop, a tablespoon, or your hands.
  • 1. Set up a steamer in a saucepan filled with water just below the steamer insert. 2. Bring the water to a boil, then gently add shrimp balls. 3. Cover and steam for about 5 minutes until shrimp balls turn opaque. 4. Place the steamed shrimp balls on a plate and let cool at room temperature for 5 minutes.
  • Combine bread crumbs with a sprinkle of salt and pepper in a bowl. In a separate bowl, whisk 2 beaten eggs. Coat steamed shrimp balls by rolling them in the bread crumbs, dipping them in the beaten eggs, rolling them in the bread crumbs again, and finally place them on a plate.
  • In a small pan over medium heat, swirl oil until shimmering. Cook shrimp balls until beautifully golden on all sides for about 5 minutes.
