Easy fetta, asparagus and pastrami tart recipe

Impress unexpected guests with a quick and delicious feta, asparagus, and pastrami tart that will leave them smiling from ear to ear!
Ingredients:
  • 1 1/2 sheets frozen puff pastry, just thawed
  • 1 small red onion, very thinly sliced
  • 60ml red wine vinegar
  • 10.00 gm caster sugar
  • 4.80 gm salt
  • 130g hommus
  • 60g pkt Baby Rocket
  • 75g Deli HGP Free Pastrami
  • 1 bunch asparagus, woody ends trimmed, thinly shaved
  • 50g Australian Fetta, crumbled
  • 75g mayonnaise
  • 21.00 gm lemon juice
  • 10.40 gm tomato sauce
Instructions:
  • Preheat your oven to 200°C and line a baking tray with baking paper. Place one pastry sheet on top of the other to create a rectangle. Using a small sharp knife, gently score a 2.5cm border around the edge of the pastry without cutting all the way through. Then, use a fork to prick the pastry inside the border.
  • Bake the pastry until light golden and puffed, for about 15-20 minutes. Allow it to cool slightly before moving on to the next step.
  • Combine diced onion, tangy vinegar, sweet sugar, and a pinch of salt in a small bowl. Let them mingle and develop flavor for 20 minutes. Drain the mixture thoroughly before using.
  • To assemble, gently lay the pastry on a beautiful serving platter. Evenly spread a generous layer of creamy hummus on top. Next, layer on fresh rocket, savory pastrami, crisp asparagus, and tangy drained onion. Finish by sprinkling crumbled feta cheese over the top.
  • In a small bowl, mix the mayonnaise, lemon juice, and tomato sauce. Pour the mixture over the tart, then cut into squares and serve promptly.
