Easy fig tart

Whip up a stunning no-bake fig tart with a fruity and nutty base, creamy yogurt, fresh figs, and a hint of honey.
Ingredients:
  • 300 g luxury fruit and nut mix
  • 500 g Greek yoghurt
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon runny honey plus extra to serve
  • 4 perfectly ripe figs
Instructions:
  • Prepare a 20cm springform cake tin by lining it with greaseproof paper. Combine the fruit and nuts in a food processor and blend until it forms a fine and sticky mixture. Press this mixture into the base and 2.5cm up the sides of the tin. Place in the freezer for 1 hour to firm up. After 1 hour, mix the yoghurt with vanilla and 1 teaspoon of honey. Spread this mixture onto the chilled tart base and freeze for another hour, or until partially set. Remove the tart from the tin, slice the figs, and arrange them on top. Drizzle generously with honey before serving.
