Fig and treacle galettes

Delicious and easy fig & treacle galettes.
Ingredients:
  • 18 (about 300g) dried figs
  • 3 sheets (25 x 25cm) frozen ready-rolled butter puff pastry, just thawed
  • 50g unsalted butter, at room temperature
  • 53.20 gm treacle
  • 1 egg yolk
  • 80g (2/3 cup) almond meal
  • 20.00 ml plain flour
  • Vanilla ice-cream, to serve
Instructions:
  • Place the figs in a heatproof bowl and cover with boiling water. Allow them to soak for 15 minutes, then drain and halve them horizontally.
  • Preheat the oven to 220°C. Line 2 baking trays with non-stick baking paper. Cut out 6 discs from the pastry using a 14cm-diameter round cutter. Arrange the discs on the trays.
  • In a bowl, use an electric beater to whip together the butter, treacle, and sugar until light and creamy. Mix in the egg yolk until fully incorporated. Fold in the almond meal and flour.
  • Evenly distribute the almond meal mixture on the pastry discs, leaving a 2cm border. Top with the figs. Gently fold in the edges of the pastry to partially cover the filling, ensuring the centers remain open. Press the edges securely.
  • Bake in the oven until the pastry is puffed and golden, about 20 minutes. Enjoy with a scoop of vanilla ice cream.
