Indulgent fig and walnut slice for anytime treat!
Ingredients:
  • 200g butter, softened
  • 2/3 cup caster sugar
  • 1 teaspoon vanilla essence
  • 2 cups plain flour
  • pure icing sugar, to serve
  • 375g packet dessert figs
  • 100g walnuts
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to 170°C. Grease a 3cm-deep, 18cm x 28cm slab pan, and line it with baking paper as directed in the note.
  • Create a delightful fig and walnut spread by combining figs, walnuts, honey, and cinnamon in a small food processor. Pulse until smooth and creamy.
  • In an electric mixer, whip together butter, sugar, and vanilla essence until light and fluffy. Add flour using a wooden spoon. Combine the mixture by hand until it forms a ball. Split the dough in half and press one portion into the pan.
  • Spread the fig mixture evenly over the base, then roll out the remaining flour mixture until it can completely cover the filling. Carefully place it over the filling, pressing it back together if it breaks a little.
  • Bake until light golden (20-25 minutes). Let it cool in the pan for 15 minutes, then transfer to a wire rack. Cut into pieces while warm, then let it cool completely. Dust with icing sugar and serve.
