Whip up a spicy fig cake with dried figs, walnuts, cinnamon, and cloves for a delightful treat!
Ingredients:
  • 1 pound dried figs
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 cup buttermilk
  • 1 cup white sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 10-inch tube pan.
  • In a saucepan, cover dried figs with water and simmer over low heat until soft, approximately 5 minutes. Drain figs, saving 1/2 cup cooking liquid.
  • Combine flour, baking powder, salt, baking soda, cinnamon, and cloves by sifting them together into a bowl.
  • Dice figs into petite 1/4-inch cubes. Blend buttermilk with the flavorful reserved cooking liquid in a medium bowl.
  • In a large bowl, use an electric mixer to whip together sugar and butter until light and fluffy. Add eggs one at a time, mix in vanilla, then blend in flour mixture and buttermilk mixture alternatively. Fold in figs and walnuts. Transfer the batter into the prepared pan.
  • Bake in the preheated oven for 50-60 minutes until a toothpick inserted in the center comes out clean. Let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
