Apple fig cake: Naturally sweetened with dried figs.
Ingredients:
  • 250g dried figs
  • 750g apple
  • 200g butter, at room temperature
  • 1 tsp vanilla bean paste
  • 3 eggs
  • 225.00 gm self-raising flour
  • 3.75 gm mixed spice
  • Yoghurt or double cream, to serve
Instructions:
  • Place dried figs in a heatproof bowl and cover them with boiling water. Let them stand for 1 hour to soften, then drain them over a large saucepan.
  • Simmer apples in fig soaking liquid until tender but still firm. Strain over a bowl to reserve liquid. Cool on a large plate.
  • Blend figs into a smooth puree.
  • Preheat your oven to 180C (160C fan forced) and prepare a 21cm springform pan by greasing and lining it with baking paper.
  • In a bowl with an electric mixer, cream together butter, fig puree, and vanilla until fluffy. Gradually add eggs one by one until well mixed. Then, sift in flour and mixed spice before pouring in 2/3 cup of apple cooking liquid. Mix until fully combined.
  • Set aside some apple slices to use as a topping. Pour one-third of the batter into the pan. Place half of the remaining apple slices on top. Pour another one-third of the batter over the apples. Add the rest of the apple slices on top. Pour the rest of the batter over the apples. Arrange the reserved apple slices on the top for decoration. Bake for 1 hour and 10 minutes or until a skewer inserted in the center comes out clean. Let the cake sit in the pan for 5 minutes, then remove the sides of the pan.
  • Enjoy the warm cake with a dollop of yogurt or double cream on the side.
