Elegant and decadent dessert, perfect for any gathering.
Ingredients:
  • 500.00 ml plain flour
  • 187.50 gm Monkfruit Classic Sweetener
  • 125.00 gm unsalted butter diced
  • 2 egg yolks
  • 30 ml chilled water
  • 180g Pink Lady apple, thinly sliced
  • 125.00 gm unsalted butter, softened to room temperature
  • 125.00 gm Monkfruit Classic Sweetener
  • 40.00 ml plain flour
  • 50.00 gm ground almonds
  • 1 whole egg
  • 505.00 gm whipping cream
  • 40.00 gm Classic Monkfruit Sweetener
  • 2.20 gm vanilla essence
  • Ground cinnamon, for dusting
  • 40.00 gm Monkfruit Golden Sweetener
Instructions:
  • Preheat the oven to 180ºC/160ºC fan-forced. Pulse flour, classic sweetener, and butter in a food processor until a crumbly texture forms for the sweet pastry tart base.
  • Combine the egg yolks and chilled water in the food processor until a cohesive mixture forms. Let it rest for 10 minutes.
  • Roll out the pastry to the desired size and gently line the tin, trimming any excess. Refrigerate for 10 minutes.
  • Poke holes in the pastry with a fork to prevent it from puffing up. Cover the pastry with parchment paper and add dried beans to weigh it down (Tip: maintains its shape).
  • Bake for 15-20 minutes until lightly golden. Remove the beans and parchment paper, then transfer the tart to a cooling rack.
  • Blend all ingredients together until velvety smooth to create the delightful frangipane filling.
  • Spread the luscious frangipane mix over the cooled base, layer with delicate slices of apple, and bake for 25-30 minutes until perfectly cooked. Let it cool to perfection.
  • Prepare the chantilly cream by whisking the cream in a medium bowl using an electric whisk until it starts to thicken.
  • Whisk in the traditional sweetener and vanilla essence until soft peaks form.
  • Transfer the mixture into a piping bag and beautifully drizzle it over the cooled tart.
  • Mix the cinnamon and golden sweetener to create a flavorful dusting. Sprinkle the cinnamon sweetener mixture over the dish before serving.
