Indulge in cozy winter muffins, free of gluten and refined sugar.
Ingredients:
  • 3 large gala apples or pink lady apples, skin on, cored
  • 30g butter
  • 80ml (1/3 cup) coconut syrup, plus extra, to serve (optional)
  • 3 tsp grated fresh turmeric or 1 tsp ground turmeric
  • 13.60 gm desiccated coconut
  • 100g (1 cup) fine oatmeal
  • 185g (1 1/2 cups) sweet potato flour
  • 12.00 gm baking powder
  • 1.25 gm ground cinnamon
  • 60ml (1/4 cup) olive oil
  • 340g low-fat Greek-style yoghurt
Instructions:
  • Preheat the oven to 180C (160C fan forced) and line twelve 100ml muffin pans with paper cases.
  • Dice 1 1/2 apples into 1cm pieces. Slice the remaining apple into 3-4cm slices. In a large non-stick frying pan over medium-low heat, melt half of the butter. Add the apple slices, 2 tsp of coconut syrup, and half of the fresh or ground turmeric. Cook and stir for 2-3 minutes until golden and almost cooked, then transfer to a plate. Melt the remaining butter in the pan, add the diced apple, 2 tsp of coconut syrup, and the rest of the turmeric. Cook and stir for 2-3 minutes until almost cooked. Stir in desiccated coconut and cook for an additional 3-5 minutes until the coconut is light golden brown. Remove from heat and let it cool completely.
  • In a large bowl, mix together oatmeal, sweet potato flour, baking powder, baking soda, and cinnamon. Create a well in the center of the mixture and pour in the eggs, oil, yogurt, 80ml (1 ⁄3 cup) water, and the rest of the coconut syrup. Stir until almost mixed, then add the chopped apple mixture and stir until fully combined.
  • Spoon muffin mixture into pans and top each with 2 slices of apple. Bake for 25-30 minutes until golden and cooked through. Cool on a wire rack and serve warm or at room temperature with an optional drizzle of extra syrup.
