Colorful turmeric-spiced chicken stew with potatoes, carrots, and onions.
Ingredients:
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 2 tablespoons ground turmeric
  • 6 chicken thighs
  • 1 (6 ounce) can tomato paste
  • 2 cups water
  • 4 carrots
  • 1 cup white sugar
  • 4 tablespoons vegetable oil, divided
  • 2 potatoes, cubed
Instructions:
  • In a large skillet over medium-high heat, warm 2 tablespoons of fragrant olive oil. Sauté onions and turmeric until onions caramelize, then introduce chicken and sauté for about 10 minutes until almost cooked through.
  • Combine tomato paste, water, salt, and pepper to your liking. Simmer over low heat for 20-30 minutes until the sauce thickens.
  • Simmer carrots in a small saucepan with sugar until they caramelize and become soft. Drain the cooked carrots. Then, saute the carrots in 1 tablespoon of vegetable oil in a small skillet over medium heat. Set aside.
  • In a large skillet, heat 3 tablespoons of vegetable oil. Add potatoes and fry until golden brown. Optionally, sprinkle in a pinch of turmeric and salt. Combine with carrots and chicken, stir well, and serve.
