Roasted Mediterranean vegetables with fetta and olives

Quick and effortless Mediterranean side dish made with frozen veggies. Perfect pairing with lamb cutlets or chicken thighs.
Ingredients:
  • 600g packet frozen Mediterranean vegetable mix
  • 1 lemon, cut into wedges
  • 1 red onion, cut into wedges
  • 100g Greek fetta, roughly crumbled
  • 82.50 ml pitted kalamata olives
  • 20.00 ml red wine vinegar
  • 36.40 gm extra virgin olive oil
  • 50g baby rocket
Instructions:
  • 1. Preheat your oven to 200C/180C fan-forced and line a large roasting pan with baking paper. 2. Arrange the frozen vegetables and lemon in the pan, then sprinkle with onion, feta, and olives. 3. Bake for 20 to 25 minutes until everything is golden and tender.
  • In a small bowl, combine vinegar and oil, then season with salt and pepper to taste.
  • Add peppery arugula to the colorful mix of vegetables. Mix gently to ensure all flavors meld beautifully. Transfer the vibrant salad to a decorative platter. Drizzle with your favorite dressing before serving.
