Savor Mediterranean roasted veggies with olives and feta for a standout appetizer!
Ingredients:
  • 1 small (6-inch) zucchini
  • 1 small (6-inch) yellow summer squash
  • 1 medium red bell pepper
  • 2 tablespoons olive or vegetable oil
  • 1 cup hummus
  • 1/2 cup crumbled feta cheese (2 oz)
  • 6 pitted kalamata olives, quartered
Instructions:
  • Preheat a medium-size contact grill for 5 minutes until it reaches 375°F. Halve the zucchini and summer squash lengthwise, scoop out the seeds with a spoon, and discard them. Remove the stem and seeds from the bell pepper by cutting around the stem, then cut the bell pepper into quarters.
  • Oil the zucchini, squash, and bell pepper pieces and grill them on both sides without covering the grill for 4 to 6 minutes until tender. Let the grilled vegetables stand for 2 minutes before cutting them into 1-inch pieces.
  • Top each vegetable piece with a generous spoonful of hummus, a sprinkle of cheese, and a single olive piece. Enjoy warm or cold.
