Try these delicious canoe snacks for a fun lakeside weekend treat!
Ingredients:
  • 1 bag (16 oz) frozen sliced carrots, cooked
  • 1 container (8 oz) plain hummus
  • 1 teaspoon ground cumin
  • 18 (6-inch) mini seedless cucumbers
  • 2 large red bell peppers
  • 1 cup sliced fresh carrots
  • Shredded lettuce
Instructions:
  • Place the cooked carrots in a food processor or blender and puree until smooth. Add hummus and cumin, then process until well blended. Refrigerate for 1 hour to enhance flavors.
  • Scoop out the center of each mini cucumber to create a canoe shape. Fill each canoe with about 3 tablespoons of carrot hummus. Cut bell peppers into oar shapes. Top hummus with 2 carrot slices and 2 bell pepper oars. Serve canoes on a bed of shredded lettuce.
