Sweet carrot hummus: a delightful twist on the classic recipe.
Ingredients:
  • 350g carrot
  • 400g can chickpeas, drained, rinsed
  • 24.00 gm tahini
  • Gluten-free rice crackers, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a baking tray with baking paper.
  • In a bowl, mix cumin, carrots, and half of the oil together. Spread the mixture onto a prepared tray and bake for 25 minutes until the carrots are golden and tender. Allow to cool before serving.
  • Combine carrots, chickpeas, tahini, lemon juice, and the rest of the oil in a food processor. Blend until creamy (refer to tip). Season with salt and pepper. Enjoy with rice crackers.
