Roasted rainbow carrots with pea hummus recipe

Colorful veggie snack with carrots, peas, and hummus - a powerhouse of vitamins, fiber, and protein!
Ingredients:
  • 1 bunch baby carrots
  • 187.50 ml cooked frozen peas
  • 125.00 ml hummus
  • 54.60 gm olive oil
  • 20.00 ml dukkah, to serve
  • fresh mint leaves, to serve
Instructions:
  • Preheat your oven to 200°C (180°C fan forced) and prepare a baking tray by lining it with parchment paper.
  • Prepare the baby carrots by trimming and scrubbing them. Place them on a baking tray. Drizzle 1 tablespoon of olive oil over the carrots and toss them to evenly coat. Roast in the oven for 25 minutes, or until they are nicely caramelized. Allow them to cool slightly before serving.
  • Blend together tender cooked frozen peas and creamy hummus in a small food processor until perfectly creamy. Season to taste.
  • On a serving plate, layer hummus followed by carrots. Drizzle with 2 tablespoons of olive oil, sprinkle with dukkah, and garnish with fresh mint leaves. Serve and enjoy!
