Greek chicken panini: Multigrain tortilla filled with hummus, feta cheese, and roasted red pepper for a flavorful twist.
Ingredients:
  • 1 (10 inch) multigrain flour tortillas
  • 1 tablespoon hummus
  • 1 (4 ounce) grilled chicken breast, sliced
  • 2 medium roasted red peppers, drained
  • 2 tablespoons crumbled reduced-fat feta cheese
  • 1 cup baby spinach leaves, or to taste
  • cooking spray
Instructions:
  • Preheat the panini maker.
  • Place the tortilla on a clean work surface, generously spread it with creamy hummus, then layer on the sliced chicken, red peppers, crumbled feta cheese, and fresh spinach leaves. Fold the tortilla in half to create a delectable pocket of flavors, and lightly spray the outside with cooking spray for a crispy finish.
  • Grill in the hot panini maker until the outside turns golden brown, about 6 to 8 minutes.
