Spiced turmeric & lemon BBQ chicken

For great flavor, grill chicken with lid closed until fully cooked.
Ingredients:
  • 1.6 kg free-range or organic chicken
  • 50 g butter
  • 2 cloves of garlic
  • 3 cm piece of ginger
  • 1 teaspoon ground turmeric
  • ¼ teaspoon ground cinnamon
  • 1 unwaxed lemon
  • ½ a bunch of fresh coriander
  • 2 - 3 tablespoons runny honey
  • 4 spring onions
  • 1 fresh green chilli
Instructions:
  • Begin by spatchcocking the chicken - place it breast side down on a cutting board and cut down both sides of the backbone to remove it. Flip the chicken over, press down to flatten it, and make slashes on the thighs. This helps the chicken cook evenly. For the marinade, melt butter, then blend garlic, ginger, turmeric, cinnamon, lemon zest and juice, coriander stalks, salt, and pepper. Add olive oil to make a paste. Rub the marinade all over the chicken, ensuring it's well coated. Refrigerate if marinating ahead. Preheat the oven to 190ºC/375ºF/gas 5. Place the chicken in a roasting tray, cover with foil, and bake for 1 hour. Prepare a mix of sliced spring onions, chili, and coriander in lemon juice as a garnish. Before serving, grill the chicken skin-side down on a barbecue or hot griddle, basting with tray juices and honey until crispy. Serve the chicken with the green garnish and dressed garden leaves.
