Chocolate, peach and fig slice

Decadent slice with sweet peaches, figs, rich chocolate, and Cointreau.
Ingredients:
  • 120g dried figs, chopped
  • 100g dried peaches
  • 13 Milk Arrowroot biscuits, roughly chopped
  • 400g good-quality dark cooking chocolate, chopped
  • 300ml thickened cream
  • 1 tsp Cointreau
Instructions:
  • Cover a 20 x 30cm slab pan with non-stick baking paper, letting it hang over the edges.
  • In a large bowl, toss together the figs, peaches, and biscuits. Allow the mixture to sit for a moment.
  • In a large heatproof bowl or the top of a double saucepan, combine the chocolate and cream. Place the bowl over a saucepan of simmering water, making sure the bowl doesn't touch the water. Stir occasionally with a metal spoon until the chocolate melts. Then, remove the bowl from the pan.
  • Combine the Cointreau and chocolate mixture with the biscuit mixture, stirring gently until fully incorporated.
  • Transfer the mixture into the lined pan, then use the back of a spoon to evenly smooth it out. Chill in the fridge for 5 hours or until firm. When ready to serve, use a warm knife to slice into bite-sized pieces.
