Easy Moccona mousse recipe

Decadent chocolate mousse with Moccona coffee and fresh summer berries.
Ingredients:
  • 40.00 ml Moccona instant coffee
  • 20.00 gm boiling water
  • 100g dark chocolate, chopped
  • 250g mascarpone, softened
  • 24.00 gm icing sugar mixture
  • 20.00 gm cocoa powder, sifted
  • 300ml thickened cream, whipped
  • Dark chocolate, extra, melted, to decorate
  • Whipped cream, extra, to serve
  • Dark chocolate, extra, finely grated, to serve
  • Peach slices, to serve
  • Mixed berries, to serve
Instructions:
  • Mix the Moccona coffee with boiling water in a heatproof bowl and allow it to cool slightly.
  • Place the chopped chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring with a metal spoon each time, until smooth (approximately 1-2 minutes). Let it cool for 10 minutes.
  • In a bowl, stir mascarpone until smooth. Gently mix in the melted chocolate. Fold in icing sugar, cocoa powder, coffee, and cream; avoid overmixing to prevent splitting. Spoon the mixture into serving glasses and refrigerate for 3-4 hours until set.
  • While the mousse chills, line a tray with baking paper. Drizzle extra melted chocolate over the paper and use a flat 2cm paintbrush or thin pastry brush to create decorative brushstrokes. Freeze for 10 minutes or until firm.
  • Garnish the mousse with a generous swirl of whipped cream, a sprinkle of grated chocolate, fresh fruit, and delicate chocolate decorations.
