Italian twist on Eton mess: peaches, chocolate, and amaretti cookies instead of strawberries, meringue, and cream.
Ingredients:
  • 2 1/2 cups whipping cream, chilled
  • 1/4 cup granulated sugar
  • 3 tablespoons unsweetened dark or regular baking cocoa
  • 1/2 lb fresh or frozen peaches (2 medium), chopped
  • 1/3 cup packed brown sugar
  • 1 tablespoon lemon juice
  • 1 1/2 tablespoons peach-flavored schnapps, if desired
  • 1 cup crushed amaretti cookies
  • Additional crushed amaretti cookies
  • 4 whole amaretti cookies
Instructions:
  • Whip cream in a large bowl with an electric mixer on high speed until it thickens. Gradually add granulated sugar and cocoa while continuing to beat. Chill until serving.
  • In a skillet, sauté peaches with brown sugar and lemon juice until a sweet sauce forms. Stir in schnapps and cook until peaches are tender.
  • Alternate velvety whipped cream, crumbled cookies, and juicy peaches in elegant dessert cups. Add another round of each layer. Finish with a dollop of whipped cream, a sprinkle of crushed cookies, and a whole cookie on top for a delightful touch. Serve promptly for the best experience.
