Fig and walnut bread

Fruit and nut bread, perfect with creamy, ripe cheese.
Ingredients:
  • Plain flour, to dust
  • 450g (3 cups) self-raising flour
  • 250g dried figs, coarsely chopped
  • 115g (1 cup) walnut kernels, coarsely chopped
  • 250ml (1 cup) milk
  • 1 egg, lightly whisked
  • Brie, to serve
Instructions:
  • - Preheat the oven to 200C. - Dust a baking tray with plain flour. - Combine self-raising flour and butter in a bowl, then rub the butter into the flour using your fingertips until the mixture resembles fine breadcrumbs. - Stir in the fig and walnut.
  • Combine milk and egg with flour mixture until smooth. Transfer dough to a floured surface and use your hands to knead until smooth (2-3 minutes). Shape into a 30cm log on prepared tray. Score the top of the dough with a floured sharp knife.
  • Bake for 30-35 minutes or until golden brown and the loaf sounds hollow when tapped on the bottom. Let it cool on a wire rack, then slice and enjoy with some cheese.
