Delight Dad with this aromatic fruit and nut toast.
Ingredients:
  • 2 tsp (1 sachet/7g) dried yeast
  • 350ml warm water
  • 60ml (1/4 cup) honey
  • 350g (2 1/3 cups) plain flour
  • 200g (1 1/4 cups) wholemeal plain flour
  • 2.50 gm ground cinnamon
  • 150g dried figs, coarsely chopped
  • 100g (1 cup) coarsely chopped walnuts
  • Melted butter, to grease
  • Butter, extra, to serve
Instructions:
  • Preheat oven to 200°C. Mix yeast, water, and honey in a bowl and let sit in a cozy spot for 10 minutes until it becomes frothy.
  • In a bowl, mix together plain flour, wholemeal flour, cinnamon, and salt. Create a well in the center and pour in the yeast mixture. Stir until combined, then use your hands to form the dough. Allow it to rest in a warm, draft-free area until it doubles in size, approximately 30-40 minutes. Add the fig and walnuts, then knead on a lightly floured surface for 3-5 minutes.
  • Grease a 10.5 x 21cm non-stick loaf pan with melted butter. Press the dough into the pan and let it rise for 10 minutes in a warm, draft-free spot. Bake for 10 minutes, then reduce temperature to 180°C and continue baking for 30 minutes until golden and the loaf sounds hollow when tapped. Cool on a wire rack.
  • Slice the loaf thickly and toast until golden. Enjoy with extra butter on the side.
