Enhance brie with fig preserves and walnuts in phyllo for a French appetizer delight.
Ingredients:
  • 1 tablespoon butter or margarine
  • 1/3 cup chopped walnuts
  • 3 sheets frozen phyllo (filo) pastry (18x14 inch), thawed
  • 3 tablespoons butter, melted
  • 1 round (14 to 15 oz) Brie cheese
  • 1/3 cup fig or ginger preserves
  • Assorted crackers or sliced fresh fruit, if desired
Instructions:
  • Preheat the oven to 400°F and grease a cookie sheet. In a skillet over medium heat, melt 1 tablespoon of butter. Stir and cook the walnuts in the butter until they turn golden brown, then take the skillet off the heat.
  • Lay 1 sheet of phyllo pastry on a cutting board and gently brush it with melted butter. Add another sheet of phyllo on top and brush with more melted butter. Finally, place the last sheet of phyllo horizontally over the first two sheets and brush lightly with the remaining butter.
  • Peel off cheese wrapper but keep rind on. Put cheese in the middle of phyllo sheets. Add fig preserves and walnuts. Lift the phyllo stack to the center, twist to create a bundle (sheets may tear slightly). Brush with the rest of the butter. Transfer to a baking sheet. Optionally, cut shapes from leftover phyllo scraps and place on top; press gently to secure.
  • Bake until beautifully golden brown, then let cool on a wire rack for 15 minutes. Enjoy with crackers and extra preserves, if desired.
